This recipe is extremely easy to make, healthy, sugar-free and doesn't require any baking. The recipe makes 20, but you might want to double up, as these will go fast!
Chop the chocolate into small pieces, and let it melt with the double cream in a water bath. Be careful not to let the chocolate get too hot, as it could curdle.
Add the desiccated coconut to the chocolate and cream mix (hold some back for later).
Grab about 1 tsp of the mixture and press one hazelnut into its centre and shape into a ball.
Roll the ball in some of the leftover desiccated coconut, and place it in a sealed container.

These Raffaello Truffles will keep in an airtight container in the fridge for up to 3 weeks!
