Make your own homemade keto granola. Perfect for snacking, sprinkled over some Greek yoghurt or why not try some over our low-carb ice cream?

Ingredients

  • 130g Almonds (chopped)
  • 130g Walnuts (chopped)
  • 130g Unsweetened Coconut Flakes
  • 35g Sesame Seeds
  • 15g Flax Seeds
  • 15g Chia Seeds
  • 1 ½ tsp Ground Cinnamon
  • 1 ½ tsp Ground Clove
  • 1 tsp Pure Vanilla Extract
  • ½ tsp Salt
  • 1 Egg White (large)
  • 50g Coconut Oil (melted)

Directions

  1. Preheat the oven to 170°C (fan) and grease a baking sheet with cooking spray.
  2. In a large bowl, mix together almonds, walnuts, coconut flakes, sesame seeds, flax seeds and chia seeds. Stir in cloves, cinnamon, vanilla and salt.
  3. Beat the eggwhite until its foamy, and stir into the granola. Add the coconut oil and stir until everything is well coated.
  4. Pour the mixture onto the baking sheet and spread into an even layer. Bake for 20 - 25 minutes, or until golden. Gently stirring halfway through.
  5. Let cool completely before transferring into an airtight container.
