Low-Carb Panna Cotta

Ingredients

  • 300ml Double Cream

  • 200ml Whole Milk

  • 3tbsp Stevia & Erythritol

  • 2 leaves Gelatine

  • 1 pod Vanilla

Directions

  1. Put the gelatine leaves in a bowl of cold water to soften.

  2. Split the vanilla pod and scrape out the seeds.

  3. Add the cream, milk, vanilla pod, vanilla seeds and sweetener into a saucepan over medium heat.

  4. Heat gently and stir until the granulated sweetener has dissolved.

  5. Remove the gelatine leaves from the water, squeeze out any excess liquid and add one at a time to the cream mixture. Stir until dissolved.

  6. Once the gelatine has dissolved completely, remove the vanilla pod and pour the mixture into individual serving bowls.

  7. Leave to set in the fridge for 3 - 4 hours.

  8. Top with some blueberries and a mint leaf.
