90g Almond Flour
2 tbsp Coconut Flour
3 tbsp Raw Cacao Powder
2 Eggs (large)
70g Erythritol (granulated)
100g Funky Fat Choc Dark
1 tsp Baking Powder
50g Butter or Coconut Oil (melted)
1 tsp Vanilla Essence
1 pinch Pink Himalayan Sea Salt
1 splash Almond Milk
Mix the flours, cacao powder, baking powder and salt in a big mixing bowl.
In a separate bowl melt the butter or coconut oil. Then add the eggs, sweetener, vanilla essence and almond milk.
Now combine the wet and dry ingredients and mix well.
Fold in the chopped-up chocolate bar.
Place in a muffin tin with 8 holes. Bake at 180°C for 20 - 25 minutes.
Please note that the carbs in the nutritional information for this recipe refer to net carbs. Which means polyols have already been removed.
You can use only half of the Erythritol for a less sweet muffin, or replace it with inulin.
