These are the best low-carb chicken nuggets you'll ever try. Cooked in the oven and with only 1.3g carbs per serving, this will become a fast favourite with the whole family.

Ingredients
- 600g Chicken Thighs (boneless)
- 30g Blanched Ground Almonds
- 2 Eggs
- 100g Pork Crackling
- Salt & Pepper (to taste)
Directions
- Heat your oven to 200°C (upper and lower)
- Beat the two eggs in one bowl, while in another mix together the almond flour, salt and pepper.
- Crush the pork crackling into fine pieces.
- Cut the chicken thighs into smaller pieces, before dipping them first in the almond flour, then the eggs and finally into the crushed pork crackling.
- Place the chicken pieces on a lined baking tray.
- Cook in the oven for about 20 minutes.
