A simple and delicious recipe that goes fantastic with a roast dinner. This classic comfort food is also a low-carb favourite, and dare we say could beat out any roast potato! Try it today, you won't be disappointed.

1 large Cauliflower
100g Cream cheese
150ml Double cream
160g Extra Mature Cheddar
40g Lightly Salted Butter
1 tsp Garlic Powder
1 tsp Dijon Mustard
Salt & Pepper (to taste)
Pre-heat your oven to 180°C (fan).
Grease a baking dish with butter and add the cauliflower florets.
Mix the cream cheese, double cream, butter, salt, pepper, garlic powder and mustard.
Once combined, pour the mixture over the cauliflower florets.
Top with the shredded cheddar.
Bake in the oven for 40 minutes, or until the cauliflower is fork-tender and the top is golden brown.
