Low-Carb Broccoli Fritters with Cheddar Cheese
Our favourite part of this snack, is that they somehow taste even better the next day —so you'd better make a few while you're at it!

Ingredients
- 30g Broccoli
- 120g Cheddar Cheese (shredded)
- 2 Eggs
- 1 tbsp Oat Fibre
- 1 tsp Cajun Seasoning
- 1 tbsp Avocado Oil
Directions
- Cut the broccoli into small pieces and steam lightly until just soft. Drain, and dry with a paper towel.
- Toss the broccoli in the oat fibre and seasoning until coated evenly.
- Add the beaten egg and stir.
- Add the cheddar cheese and stir until evenly coated.
- Place on a non-stick pan over medium heat and add the oil.
- Once the pan is hot, divide the mixture into 4, and spoon into the pan.
- Cook on the side until the cheese on top of the fritter begins to melt and the bottom is crusty and golden (about 2 - 3 minutes)
- Flip and cook on the other side until golden.
