These crispy Broccoli and Cheddar Cheese Fritters are super tasty! They only require 6 ingredients and are a great low-carb and keto snack option.
Low-Carb Broccoli Fritters with Cheddar Cheese

Our favourite part of this snack, is that they somehow taste even better the next day —so you'd better make a few while you're at it!
Cut the broccoli into small pieces and steam lightly until just soft. Drain, and dry with a paper towel.
Toss the broccoli in the oat fibre and seasoning until coated evenly.
Add the beaten egg and stir.
Add the cheddar cheese and stir until evenly coated.
Place on a non-stick pan over medium heat and add the oil.
Once the pan is hot, divide the mixture into 4, and spoon into the pan.
Cook on the side until the cheese on top of the fritter begins to melt and the bottom is crusty and golden (about 2 - 3 minutes)
Flip and cook on the other side until golden.
