Low-Carb Raffaello Truffles
This recipe is extremely easy to make, healthy, sugar-free and doesn't require any baking. The recipe makes 20, but you might want to double up, as these will go fast!

Ingredients
- 300ml Desiccated Coconut
- 100ml Double Cream
- 200g Low-Carb White Chocolate
- 20 Hazelnuts
Directions
- Chop the chocolate into small pieces, and let it melt with the double cream in a water bath. Be careful not to let the chocolate get too hot, as it could curdle.
- Add the desiccated coconut to the chocolate and cream mix (hold some back for later).
- Grab about 1 tsp of the mixture and press one hazelnut into its centre and shape into a ball.
- Roll the ball in some of the leftover desiccated coconut, and place it in a sealed container.
