Low-Carb Scotch Egg

A traditional British favourite and a great option for those on-the-go lunches!

Ingredients

  • 5 Eggs
  • 6 Sausages (remove the skin)
  • 30g Pork Crackling
  • 1 tsp Chilli or Herbs

Directions

  1. Hard boil 4 of the eggs and allow to cool.
  2. Open the sausages and use the meat to cover the hard boiled eggs.
  3. Crack the remaining egg into a bowl and whisk.
  4. Crush your pork crackling and spread out onto a plate.
  5. Dip your sausage covered eggs into the raw egg, and then the crushed pork crackling.
  6. Air fry, oven bake or deep fry.
