Low-Carb Cherry Compote

A homemade cherry compote, perfect for desserts or a tasty addition to yogurt or granola. You'll be tempted to eat this cherry compote by the spoonful!

Ingredients

  • 500g Sweet Cherries
  • 2 tbsp Granulated sweetener (like erythritol)
  • 2 tbsp Water
  • ½ tsp Almond extract

Directions

  1. Wash the cherries, remove the stem and the pit.
  2. Place the prepared cherries in a saucepan.
  3. Add the sweetener and water, and let simmer over a low heat while stirring.
  4. Continue to stir until the fruit begins to soften and produce natural fruit juices. This will take up to 20 minutes.
  5. Remove from the heat and add almond extract.
  6. Cool before placing in an airtight container.
  7. Enjoy warm or cold.
