A cheesy garlic bread made from riced cauliflower and broccoli instead of dough. The riced vegetables are bound with egg, mozzarella and extra mature cheddar, seasoned with garlic powder, then pressed thin on a baking tray and baked until the edges crisp and the middle sets. Pressing it thinner than feels right is the key, because a thick layer steams rather than bakes and you lose the structure. It cuts into four portions at 3g carbs, 17g fat and 17g protein each. Serve it alongside soup or a chilli, or cut it into strips and use it for dipping. Best eaten within twenty minutes of leaving the oven.

Low-Carb Broccoli Cheesy “Bread”

Ingredients

  • Fell 250g Cauliflower & Broccoli Rice

  • 100g Grated Mozzarella Cheese

  • 100g Grated Extra Mature Cheddar

  • 1 tsp Garlic Powder

  • 2 Eggs

  • Salt & Pepper (to taste)

Directions

  1. Pre-heat the oven to 200°C

  2. Microwave the broccoli rice for 3 minutes.

  3. Add half of the two cheeses, the eggs and the spice.

  4. Spread out on a silicon sheet, and bake at 200°C until golden.

  5. Add the rest of the grated cheese and place back in the oven until golden.
